Jim Valdez grew up in Southern Colorado eating “Santa Fe” style Mexican cuisine, specifically the smothered and handheld burritos made with the delightfully spicy and flavorful “Hatch” green chiles. Having moved to Los Angeles years ago, he’s been on the hunt for a kick-ass Santa Fe style burrito for as long as he’s been away from home but until now, no luck…

Teaming with legendary chef Oscar Ayala, Jim is excited to announce they’ve launched Ghost Burrito and are bringing these delicious burritos to the Coachella Valley, specifically Palm Desert. Still rooted in the culture of Hatch Green Chiles, Jim and Oscar are pairing the traditional fare with some downright funky and fun cuisine! Make sure to try the classics such as the (wait for it) Ghost Classic, the El Compadre as well as the fun and groovy Desert Dog and the El Diablo! And if you’re looking for something outside the box, make sure to try The Goat Hill!
